You're talking about Dressage
one of the three disciplines of the Equestrian Events
to be held in Hong Kong
The second is Jumping
in which horses jump over a course of obstacles
The third is Eventing, which comprises Dressage
Jumping and a cross-country test

There will also be Dressage in Paralympic Equestrian Event.
